Take a pan or kadai and Put the Brinjals into hot oil
Fry the Brinjals a while and put the Garlic first and then add onions, chili and fry again
Add tomato, salt, turmeric, red chili powder ,cumin powder
Then just fry in low flame a while and poor the water and cover it with a lead
After 2 minutes open the lead and stir it properly to evaporate the water and oil comes out
Serve it with hot rice . You may garnish with Coriander leaves(optional)
